Folks asked for it and, after a lot of searching, we’ve finally found a dark roast coffee that still is bursting with unique local character. Normally Sumatran coffees are processed with wet-hulling, removing much of the fruit pulp before further processing. With a natural process, the coffee bean is dried within the fruit, giving it a more complex flavor profile. Sumatrans generally stand up to a darker roast without losing as much of their terroir and this one is no exception. Having tried this at medium, dark, and very dark roasts, they were all incredible with a unique fruit forward character that is balanced by a thicker body. The dark roast came out with the best balance and just made us say “Ah!” and reach for another cup. This one might just make dark roast drinkers out of us yet!
