This offering from Elias and Shady Bayter at El Vergel Estate is not your typical cup of decaf coffee. After trying more than a few different decaf offerings, the sweetness and candied cherries of this one really sets it apart. If you didn't know this was a decaf, you'd just think it was an excellent cup of coffee. You can brew this medium roast any time of day without the effects of a fully caffeinated cup thanks to the ethyl acetate (EA) processing. Don't let the chemical name fool you, ethyl acetate is a naturally occurring simple ester that, in this case, comes as a byproduct from Colombian sugar cane that removes 99.9% of the caffeine in the green coffee before roasting. We're hoping to make this a staple offering from H-Bar so don't be afraid to have that evening cup as we'll have more where that came from! Full caffeine not working for you but still want a bit of a pick-me-up? Mix this decaf with our Colombia Tolima for a wonderful "half caff" experience! As with all our coffees, this decaf Colombian is roasted fresh to order.

Some more details about this coffee and its production from the importer:

Sweet sweet sweet! A complex profile of red fruits with several sweet notes, accompanied with a medium body and malic acidity.
Process: Our flagship coffee, produced for over a decade where we have been able to create a blend between traditional processing and modern touch with our special fermentations to develop those fruity flavors in the cup.

After that we perform the extraction in circular containers with a combination of water and ethyl acetate where the coffee is immersed several times until the caffeine level drops to 0.1%.

Martha and her two sons, Elias and Shady [Bayter] started to work with experimental coffee in a way that they could create and pass through the technology that would help to improve the quality of life of the families that work together with them in their project El Vergel Estate.
